Does Finnagins Wake count as Irish mythology?
I made the poor decision of drinking hot chocolate while watching this. It went up my nose at 18:00.
"Fighting for who's OC is cooler" is literally Hinduism.
Protip: Nobody's cooler than Krishna, but Shiva is legit more likeable.
You can look into Celtic mythology, which is the origin of all things Irish since the Celt's defeat by Rome. That's where pretty much most of Irish oral mythology tradition comes from. There's some good stuff in there, but it also mixes with Welsh and British stories seeing how they the three traditions have the same root.

okay, here's a cool Irish mythology. It's the tale of how sweet treats were invented.
One morning there were these kids that finished all of their morning chores and were hungry. So they had a meal that consisted of either oatmeal or porridge, and they mixed it with milk. A short man wearing green walked by and noticed what they were eating. Complimenting their foods, he decided to reward them with a charm spell that enhanced the flavor of their meals. These resulted in sweet chewy bits being added to their meals and it was delicious. And so, every morning, the kids would do their chores and hunt down the short man wearing green. After a while, the short man wearing green got fed up with the kids asking for his charms. One morning, he noticed them. And he said "Oh No! They're after me lucky charms!" and then he flew off on his red balloon. THE END.

If anyone is interested in that story Chris mentioned then checkout a channel called Overly Sarcastic Productions Miscellaneous Myths: Fionn Mac Cumhaill and Cú Chulainn. Both videos are 8 minutes and discuss the Irish myths. Fionn was actually a badass akin to Beowulf and Hercules/Heracles. The fisherman was still an idiot for walking off.
What about the green knight? Oh wait.. thats a christianization of Irish mythology. Good luck looking for non christianized Irish folklore that was written down. The Bible brought writing to Ireland and in doing so they took folk lore and tweeked it a bit to fit Jesus. Not being rude or w.e its hard even for an armchair historian.
Definitely look into the high kings of England. Wikipedia has a good list. I tried before commenting to find something too :L its hard to get a written story from 2500 years of spoken lore. Overly sarcastic productions has some great animatic stories from all types of mythology, definitely check them out too.

OK, vis a vis the Salmon of Wisdom, it's the myth of Fionn Mac Cumhail (pronounced Fin Mac Cool) and there's more myths about the shit he does both before and after that. I would highly suggest Overly Sarcastic Production's video on him.
Cu Chulainn is pretty cool, I think. He's like Irish Hercules and he has a special spear, the Gae Bolg- in some Final Fantasy games they named the highest powered spear after his.
